Ingredients

  • 2 tbsp smoked paprika
  • 2 tbsp brown sugar
  • 3 tbsp Kosher salt See Note 1 for how to adjust the salt if your turkey is already brined.
  • 1 tbsp black pepper finely ground
  • 1 tbsp Thyme dried
  • 1 tbsp Rosemary dried
  • 1 tbsp mustard powder
  • 1 tbsp garlic powder
  • 1 tbsp onion powder

Instructions

  • Mix all ingredients well.
  • Coat the meat evenly.
  • Allow the rub to activate on the meat for at least 30 minutes.
  • Store in an airtight jar.

Notes

1. Adjusting for brined turkey: This rub is meant to be salt-free when the turkey has been heavily brined. A wet or dry brine already seasons the meat, so adding more salt can push it too far. If your turkey is pre-brined, self-basting, or kosher, cut the salt in the rub by half. If you brined it yourself, leave the salt out entirely.
